Almond Biscotti

1 1/2 c all-purpose flour
1 c chopped almonds/cashewnuts/walnuts/even peanuts :)
1/2 tsp. baking powder
3/4 c sugar
Mix all the above ingredients dry.

2 eggs
1/4 c butter, melted
1 egg, separated

Preheat oven to 375 degrees. Combine the dry mix with the egg, butter, and extra egg yolk from separated egg. Mix on low speed until the dough is smooth.

Roll dough out into aluminium foil about 3 inches wide. Place this onto a cookie sheet and brush with remaining egg white. Bake for 30 minutes or until golden brown. Remove from oven and reduce oven temperature to 325 degrees.

Cut diagonally, into 1/2-inch slices. Bake the slices on their sides for another 12-14 minutes. Cool and store in an airtight container.
